Conestoga Farms Eggs is a Canadian company that is known for their rich, buttery, deep yellow yolks.

When Conestoga Farms Eggs approached me, they asked me to submit 3 recipe ideas, of which they would pick one for me to develop. Of course, there was one I had in mind as my favorite of the three, and fortunately they picked that one! Photographing meringue is such a joy because of the layers of colour and texture. The lemon curd was a perfect vessel to herald the fabulosity of Conestoga’s deep yellow yolks.
